Paneer parota rolls, made your way.
Build vegetarian paneer parota rolls with a spiced onion-and-capsicum filling. Includes quantities, assembly tips and Vajraa pack links.
A warm parota, a savoury paneer filling and a little freshness make a satisfying handheld meal. Keep the filling fairly dry so the bread stays easy to roll. The same filling also works in a chapati when you want a different bread.
Ingredients
- 2 Malabar parotas
- 200 g paneer, prepared as directed on the pack
- 1 small onion, sliced
- ½ medium capsicum, thinly sliced
- 2 teaspoons oil
- ½ teaspoon cumin seeds
- ½ teaspoon ground coriander
- ¼ teaspoon turmeric
- ¼ teaspoon chilli powder, or to taste
- Salt to taste
- A squeeze of lemon and a little chopped coriander, optional
- 2 teaspoons thick chutney, optional
Method
- Prepare the paneer according to its pack instructions. Cut it into small strips or cubes suited to a roll.
- Heat oil in a pan and add cumin. Add onion and capsicum; cook until softened but still holding their shape.
- Reduce the heat, add coriander powder, turmeric and chilli powder, and stir briefly. Add a splash of water if the spices start to catch.
- Add paneer and salt. Toss gently until hot throughout. Let excess moisture evaporate, then finish with lemon and coriander if using.
- Heat each parota according to its pack directions. Spread a little thick chutney over the middle, if desired.
- Divide the filling between the two breads. Fold in the bottom, roll up the sides and serve immediately.
Keep the roll easy to eat
A smaller filling is easier to wrap than a heavily loaded centre. Avoid watery sauces and let excess steam escape from the filling before assembling. For a mild version, omit the chilli powder and offer chutney separately.
